CHEF LINDA'S RECIPE OF THE MONTH....June, '08

                     "Easy Early Summer Dinner"

There's NOTHING like a Good Steak Dinner.....  Try this recipe....New York Strip Steak with Chef Linda's Corn & Tomato Salsa:

Preparation:

1.  Use a prime, or choice New York Strip Steak, & season it with salt (kosher only), and pepper.  Grill the steak to your desired temperature!!(Don't kill it....There's nothing like a rare steak.)

Tomato-Corn Salsa:

2.  Blanch 3 ears of corn for 3 minutes.  (A damp towel rubbed over the corn will take off any remaining silk.)

3.  Shock the corn in ice bath, & dry.

4.  Dice 3 plum tomatoesSlice 1/2 red onion into very thin slices and  cut rings in half.  Toss the tomatoes & onions with 1 teaspoon of red wine vinegar, 1 1/2 tablespoons of extra virgin olive oil, and add salt & pepper.

For extra zip, add 1/2 minced jalapeno pepper, with the seeds & ribs taken out.  You can also add 1/2 cup of baby arugula for more depth & spice.

5.  Slice your steak, and smother with you salsa!!

Now the best part......prepare a potato in your favorite style, and enjoy dinner with a great glass of red wine!!
